From storage of the raw ingredients in modern 60 ton silos to the quality control system, Oexmann‘s ice cream cones and wafers are manufactured in modern facilities equipped with computer controlled technology. The fully automatic mixing of different dough recipes is computer controlled. The system we introduced in 2009 to prepare the dough is the only one of its kind in the industry. On the one hand it guarantees the extremely high precision required for a consistently high standard of quality and on the other hand it generates detailed electronic documentation and provides a precise tracking system. The dough preparation system and the baking machine together comprise one of the most modern facilities of its type in the world.
Modern technology is also at hand in our laboratory where we develop new recipes or improve the old ones.
In 2011 we introduced a new cleaning procedure to the wafer manufacturing process. The new method uses laser technology to keep the baking trays clean throughout the production process - making additional cleaning redundant. The advantage is a significantly more consistent quality combined with better product safety.
About every five years, all the units are modernised and the equipment replaced. The average age of all units is approximately 3.5 years.
Currently, 13 large stainless steel automatic baking machines produce up to 4.8 million ice cream cones a day. They are packed immediately and delivered on demand – in part by our own trucks – to our customers.
Over the years, we have developed many patented processes to improve the production processes. The combination of stringent in-house conditions and permanent inspection guarantees smooth production runs and high quality.
